As summer comes to a close, this is one of those recipes to help you hold on! This smoothie is sweet, tangy and will remind you of being in the tropics. Just one sip and I felt like I was back at one of our pre-baby Sandal’s vacations, lounging on the beach without a care in the world. When everywhere I look I see back to school supplies, pumpkins and Christmas decorations, this smoothie helps remind me it’s only mid-August and we still have a little bit of time to take advantage of all summer has to offer – fresh fruits, sun and the carefree attitude that goes along with it. I hope you take a moment to make this yummy smoothie that reminds me of summer in a glass!
- 1 (6 oz) coconut flavored yogurt
- ½ cup milk (I used Almond)
- 1 cup frozen mango
- 1 cup frozen pineapple
- Place all ingredients in a blender and blend until smooth and creamy. You my want to add a little additional milk to make it thinner. I added about 1 additional tablespoon.
