Are you like us and staying in for Valentine’s Day? The past few years we’ve chosen to stay in and make a nice dinner versus going out. Plus this year with Emily, it just seemed like the most obvious choice since we’re guessing most restaurant guests don’t want a fussy baby next to them for their romantic meal, right? I mean, how romantic is it to have cheerios flying by your face…. the answer is not very 🙂
In light of our V-day dinner at home, today I’m featuring one of Kevin’s favorite recipes – roasted asparagus! This is one of his go-to side dishes and we make it often when asparagus is in season! It’s more of a spring-time vegetable, coming into season in March, but I usually see it at the stores around Valentine’s Day. Since we usually make steak for our fancy meal, something healthy and green, like asparagus, is the perfect side dish! Luckily for me, Kevin loves his green veggies!
This is such a breeze to whip up and so nice that the only ingredient I need from the store is asparagus. Double win in my book! All you need to do is cut off the hard ends, drizzle with some olive oil, salt and pepper and throw in the oven for 20 minutes! How simple is that? If you need a quick side dish to serve with your special meal, look no further, this will be loved by all!
- 1 bunch asparagus
- 1 Tbs. olive oil
- pinch, salt and pepper
- Pre-heat your oven to 400 degrees.
- Cut off "woody" ends of the asparagus - I cut about 1 inch up. Then lay them on a large baking sheet. Make sure they are in one layer and not overlapping.
- Sprinkle them with the olive oil, salt and pepper. Mix them with your hands or spatula so they are all well coated.
- Place in the oven for 20 minutes. Remove and serve!
