With only two ingredients, this No-Churn Banana Soft Serve is a quick, easy and healthy treat the whole family will love!
Ice cream is hands-down one of my favorite foods. In my younger days, I pretty much had ice cream on a daily basis. However, tack on about 10 years onto 20-something Melissa and I can’t really do that any more. Not only has my will-power to only eat a 1/2 – 3/4 cup serving dwindled to zero, but this girls metabolism has also severely diminished. Growing old definitely has its perks, some parts of it can really be no fun! Who’s with me?
Anyway, back to the food. After hopping on the banana “ice cream” train, my days of eating ice cream on a daily basis has returned! If you love food, like me, I’m sure you’ve seen recipes like this floating around. You pretty much just put frozen bananas and a little milk into a food processor, let it go for about a minute and you’ve got a concoction that is almost identical to soft serve ice cream. It’s not “healthy ice cream” like that slow-churned, low fat, low calorie kind at the store, it’s honest to goodness, healthy ice cream! It’s like magic, honestly.
I never gave it a try until recently because I live in a house of banana lovers and they usually don’t last around long enough to go beyond ripe. However, the other day at the store there were some over-ripe bananas on sale and I snatched them right up with this recipe in mind.
The day before I planned to make it I peeled a few bananas, cut them in half and put them in a large zip-lock bag. The next day I simply put the frozen bananas right in the food processor and let it whirl away for about 10-20 seconds, added a little milk and voila! you’re done!
I found about 4 Tbs. of milk to 3 bananas made the perfect recipe, but you might want to start with 2 Tbs. and add more depending on your soft serve preference. Kevin and Emily ate it up in seconds. Kevin kept saying “It’s just bananas and milk??” Yes honey, just bananas and milk!!
If you’re looking for a healthy snack that only takes moments to make and keeps everyone cool in the summer heat, this no-churn banana soft serve is a must. You will look like a rockstar to all who try it and that’s just about the greatest feeling int he world! You know I’m right 🙂
- 3 over-ripe frozen bananas, cut in half*
- 2 - 4 Tbs. milk
- Place the frozen banana in a food processor. Process until pieces are very small and crumbly, about 10-20 seconds.
- With the food processor running, pour the milk through the hole in the top. Continue to process, adding more milk if desired, until it reaches soft-serve ice cream consistency, about another 30 seconds.
