This flavorful and healthy Mediterranean spinach and feta breakfast bake will give the whole family a reason to get out of bed in the morning!

Not only is it healthy with good for you veggies like spinach and red pepper, but it can also be made the night before and popped into the oven the next morning! When it comes to brunch, having at least one make ahead dish is a must for me. Running around first thing in the morning trying to make a million dishes is the last thing I want to do!
This dish, which combines several different Mediterranean flavors, is one of my favorites! If we go out to breakfast and there’s some dish with eggs, spinach and feta cheese, you can pretty much guarantee that’s what I’m going to order. Something about this combo just gets me every time! Where are my other feta cheese lovers out there??
I was introduced to this dish by our good friends, Aaron and LeAnn. We both have little ones and since it’s a little tougher to go out to breakfast these days, we’ve started taking turns each month to host the other family for breakfast. They served us this dish a few months back and I just couldn’t get enough!
I knew I had to make it asap, especially when they told us it was from Gina at Skinny Taste! Greek inspired, healthy and delicious – yes please! Add in the fact that it can be made the night before serving and you’ve got a winning breakfast recipe.
Making it is a breeze as well. After whisking together some eggs, milk, salt and pepper, stir in your Mediterranean ingredients: spinach, red pepper, artichoke hearts and feta cheese. Once combined, pour into a dish (lightly sprayed with cooking spray) and bake for about 30 minutes. After a quick cool, breakfast (or brunch, lunch or dinner!) is served!

- 6 eggs
- ½ cup milk (2% or whole preferred)
- ½ tsp. salt
- ¼ tsp. ground pepper
- 5 oz frozen spinach, defrosted and squeezed of excess water
- ½ cup red pepper, diced
- ½ cup artichoke hearts, diced
- ⅓ cup feta cheese, crumbled
- Pre-heat oven to 375 degrees. Spray an 8x8 pan or 9" pie dish with cooking spray and set aside.
- In a medium sized bowl, whisk together the eggs, milk, salt and pepper.
- Stir in the spinach, red pepper, artichokes and feta cheese.
- Pour into the prepared dish and bake for 30-35 minutes, or until a knife inserted into the center comes out clean.
- Let dish rest for 5 minutes and then serve.
