These homemade dill pickles are so super easy and tasty that you’ll never want to go back to the jarred grocery store ones again!
A few years ago I was really into canning fruits, jellies, etc. I even canned my own pickles and gave them out as Christmas gifts! While canning your own pickles is pretty easy, it took about 6 weeks before they were ready to eat, which just seems like a lifetime when you want to eat them right then! This version only take 2 days though, that’s right 2 DAYS!! In just 48 hours, you can have your very own homemade dill pickles! How exciting is that??
They’re really easy to make too. All you need to do is make a brine, which is the “juice” that gives the pickles their flavor. The brine consists of water, vinegar, kosher salt, garlic and dill, of course. After making the brine, just add your cucumber slices. You can definitely use a pickling cucumber, but the regular ones you usually see at the store work too! I sliced mine as if they would go on a sandwich, but you could make them into spears too! If you want to give them out as gifts, you could put them in a mason jar or some other sort of cute jar. Since we were having them with burgers at home, I just put them in a large tupperware container. Just note, since you won’t actually be using the real canning process, they aren’t going to last all that long, but luckily you probably won’t have that problem since these are so tasty and will be eaten up in a snap!
One might think it’s super complicated to make something like pickles, but these aren’t fussy at all. I think they would be just perfect to serve at a Memorial Day party and I think your guests will be super impressed!
- 1 large cucumber, sliced
- 1½ cups water
- 3 Tbs. white vinegar
- 1½ tsp. kosher salt
- 2 garlic cloves, minced
- few sprigs of fresh dill
- In a small bowl, combine the water, vinegar, salt and minced garlic, set aside.
- Slice the cucumber. Get a tupperware container that will hold all of the slices. Put the fresh dill at the bottom. Top it with the cucumber slices and then pour the liquid mixture over top.
- Refrigerate for two days and then enjoy!
