Baked Brown Rice
Serves: 4-6
Are you looking for a healthy side dish to go with all of your lightened up meals?  Look no further because this baked brown rice is just what you need!
  • 1 cup brown rice
  • 2 cups water
  • pinch, salt and pepper
  1. Pre-heat the oven to 350 degrees.
  2. Add the rice to a 2 quart oven-safe baking dish.
  3. Put the water, salt and pepper in a small pot over medium-high heat and bring to a boil. Once it boils, remove it from the stove and pour into the dish with rice in it. Stir to combine.
  4. Place foil over the dish and crimp sides so steam cannot escape. Bake for 60 minutes.
  5. Remove the dish from the oven and let it sit for 5 minutes. Remove the foil (be careful of the hot steam!), fluff and serve.
