Pumpkin Spice Baked Oatmeal
Serves: 6
Do you need a warm and healthy breakfast to fill you up on these chilly fall mornings? If so, then this Pumpkin Spice Baked Oatmeal is just what you're looking for!
  • 2 cups old fashioned oats
  • 1 cup quick oats
  • ¼ cup brown sugar
  • 1 tsp. pumpkin pie spice
  • ½ tsp. salt
  • 2 cups milk (I used unsweetened almond milk)
  • 2 eggs
  • ¾ cup pumpkin (not pumpkin pie mix)
  • 1 tsp. vanilla extract
  • For serving: pancake or maple syrup
  1. Pre-heat the oven to 350 degrees. Line an 8x8 inch pan with cooking spray with cooking spray, set aside. *For easier clean up, line the pan with aluminum foil before spraying with cooking spray.
  2. In a medium bowl, combine oats, sugar, pumpkin pie spice and salt. Stir to combine.
  3. In a small bowl, whisk together the milk and eggs, add the pumpkin and vanilla
  4. Pour the wet ingredients into the oat mixture and stir to to combine.
  5. Let the mixture set for 10 minutes, stirring occasionally.
  6. Pour the batter into the prepared pan and bake for about 40 minutes, until top is set and edges are turning light brown.
  7. Cut into six slices and drizzle with syrup.
