Quick and Easy Taco Quiche
Serves: 4-6
  • 1 Tbs. oil
  • 1 lb. ground turkey
  • 1 packet taco seasoning (or my homemade version, link below)
  • 1 (4 oz.) can diced green chilies
  • 1 cup milk
  • 2 eggs
  • ½ cup Bisquick
  • ½ cup cheddar cheese, shredded
  • chopped lettuce, diced tomato and sliced green onion, salsa, hot sauce, for serving
  1. Pre-heat oven to 400 degrees. Spray a 9" pie plate with cooking spray.
  2. Place a large pan over medium heat on your stove. Add the oil and let heat for 1 minute. Add the ground turkey and onion. Cook until no longer pink, stirring frequently to break up the turkey.
  3. Once the turkey is cooked through, pour it into the prepared pie dish. Spread the diced chilies on top.
  4. In a small bowl, combine the milk and eggs. Add in the Bisquick and whisk until combined. Pour on top of the meat and veggies.
  5. Bake for 20 minutes. Spread the shredded cheese on top and bake for 2-3 more minutes.
  6. Remove from the oven and let it cool for 5 minutes. Top with the lettuce, tomato, green onion, salsa and hot sauce.
