Sloppy Joe and Cheddar Biscuit Casserole
Serves: 4-6
  • 1 Tbs olive oil or vegetable oil
  • 1 lb ground chicken or turkey
  • ½ yellow onion, diced
  • 1 green pepper, diced
  • 5 cloves garlic, minced
  • ¾ cup ketchup
  • ½ cup water
  • 1 Tbs brown sugar
  • 1 tsp chili powder
  • ½ tsp mustard powder
  • ¼ tsp red pepper flakes
  • 2 Tbs tomato paste (heaping)
  • 1 tsp Worcester sauce
  • 1 tsp Hot sauce
  • ½ cup + 2 Tbs. Bisquick
  • 3 Tbs. cheddar cheese, grated + extra for topping
  • ½ cup milk (I used 2%)
  1. Pre-heat the oven to 350 and spray an lightly spray an 8x8 inch casserole dish with cooking spray. Set aside.
  2. Pour the oil in a large skillet or dutch oven over medium heat. Add ground chicken (or turkey) and cook, breaking apart, until it's no longer pink. Add the onion, green pepper and garlic. Saute until vegetables get soft, about 5 minutes.
  3. Add the sauce ingredients: ketchup, water, brown sugar, chili powder, mustard powder, red pepper flakes, tomato paste, worcester and hot sauce. *Note: this sauce could easily be put together the day before and stored in the refrigerator in an air-tight container if you want to give yourself a head start on dinner the next day.
  4. Stir to incorporate the sauce throughout meat and veggie mixture. Simmer for 15 minutes, stirring occasionally. Taste and add salt and pepper as needed. When finished simmering, pour into your prepared 8x8 dish.
  5. While the sloppy joe mixture is simmering, make the biscuits. Put the Bisquick in a medium bowl and stir in the cheddar cheese. Then stir in the milk until a shaggy dough is formed. Don't worry, it will be a little sticky at this point.
  6. Turn out the dough to a well floured work surface. Pat it into a square roughly the same size as your serving dish. Cut into 6 squares and lay over the sloppy joe mixture. Top with additional cheddar cheese, if desired.
  7. Bake for 15-17 minutes, until biscuits look done. Remove from oven, cool for 5 minutes and serve.
