Holiday Eggnog and Cranberry Baked Oatmeal
Serves: 6-8
This Holiday Cranberry Eggnog Baked Oatmeal is the perfect breakfast to serve once it hits December, aka the most wonderful time of the year!
  • 2 cups old fashioned oats
  • 1 cup quick oats
  • ¼ cup packed brown sugar
  • ⅓ cup dried cranberries
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • ¼ tsp. nutmeg
  • 1 cup eggnog
  • 1 cup water
  • 1 eggs
  1. Pre-heat oven to 350 degrees. Spray an 8x8 pan with cooking spray, set aside
  2. In a large bowl, combine the oats, brown sugar, cranberries, baking powder, salt and nutmeg. Stir to combine.
  3. In a medium bowl, whisk together the eggnog, water and egg
  4. Pour the eggnog mixture into the dry ingredients and stir to combine. Let mixture sit for 10 minutes, stirring occasionally.
  5. Pour into prepared pan and bake for 35 minutes. Top should be turning light brown and no longer look wet. Serve with an extra splash of eggnog or milk, if desired
