Creamy Parmesan Orzo
Serves: 4-6
Creamy and cheesy with some peas thrown in for good measure, this quick and easy Creamy Parmesan Orzo will be your new favorite addition to dinner!
  • 1 Tbs. oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1½ cups orzo pasta
  • 3¼ cups chicken broth (low sodium)*
  • 1 cup peas (left frozen is fine)
  • ⅓ cup parmesan cheese**
  1. Heat the oil in a large saucepan over medium heat. Add the diced onion and cook for 3-5 minutes, until wilted. Add the minced garlic and cook another 30 seconds - 1 minute.
  2. Stir in the orzo pasta and toast for a minute or two, stirring frequently.
  3. Slowly pour in the chicken broth and stir to combine. Bring to a simmer, stirring occasionally. Reduce heat to low, cover and cook for about 10-12 minutes, until the liquid is almost absorbed.
  4. Turn off the heat. Stir in the cheese and peas, cover and let set for 2 minutes.
  5. Top with additional cheese, if desired and serve.
*I usually buy a 4-cup container for this recipe and use the left over broth to "revive" the orzo when serving as leftovers. A few splashes of broth before microwaving helps restore the original creaminess.
**Shredded yourself from a block of parmesan is preferred for optimal cheesiness :)
