Peanut Butter and Jelly Oatmeal
This oatmeal is a fun take on the classic childhood favorite, peanut butter and jelly, that the whole family will enjoy!
  • 1 cup water
  • 1 cup milk (I used unsweetened almond milk)
  • ½ cup old fashioned oats
  • ½ cup quick oats
  • 1½ Tbs. creamy peanut butter
  • 1 tsp. brown sugar
  • 2 Tbs. jelly (any flavor, I used strawberry)
  • chopped peanuts, optional
  1. Heat water and milk in a medium sized sauce pan over medium-high heat.
  2. Once you start to see little bubbles form around the sides of the pan, add the old fashioned oats and reduce heat to medium. Stir to combine and cook for 4 minutes, stirring occasionally.
  3. Add the quick oats, peanut butter and brown sugar. Cook for another 2-3 minutes, until oatmeal reaches desired consistency (*see note)
  4. Pour into two serving bowls, top each with a swirl of jelly, about 1 Tbs. each. Add chopped peanuts, if desired.
Cook longer for a thicker consistency, shorter for thinner. Do note, oatmeal will thicken as it cools. If you refrigerate some for the next day, you'll want to add some milk to it before re-heating.
