Sloppy Joes
Serves: 6 sandwiches
  • 1 Tbs olive oil or vegetable oil
  • 1 lb ground chicken or turkey
  • ½ yellow onion, diced
  • 1 green pepper, diced
  • 5 cloves garlic, minced
  • ¾ cup ketchup
  • ½ cup water
  • 1 Tbs brown sugar
  • 1 tsp chili powder
  • ½ tsp mustard powder
  • ¼ tsp red pepper flakes
  • 2 Tbs tomato paste (heaping)
  • 1 tsp Worcester sauce
  • 1 tsp Hot sauce
  • salt and fresh ground pepper, to taste
  • 6 hamburger buns
  1. Pour oil in a large skillet or dutch oven over medium heat. Add ground chicken (or turkey) and cook, breaking apart, until it's no longer pink. Add the onion, green pepper and garlic. Saute until vegetables get soft, about 5 minutes.
  2. Add the sauce ingredients: ketchup, water, brown sugar, chili powder, mustard powder, red pepper flakes, tomato paste, worcester and hot sauce. *Note: this sauce could easily be put together the day before and stored in the refrigerator in an air-tight container if you want to give yourself a head start on dinner the next day.
  3. Stir to incorporate the sauce throughout chicken and veggie mixture. Simmer for 15 minutes, stirring occasionally. Taste it and add salt and pepper as needed. Put a good heaping on each hamburger bun and it's as easy as that!
