Whole Wheat Buttermilk Pancakes
Serves: 18 pancakes
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 Tbs. brown sugar
  • 2 eggs
  • 2 cups low-fat buttermilk
  • 2 Tbs. unsalted butter, melted and slightly cooled*
  1. Pre-heat your griddle to 350 degrees and lightly spray with cooking spray.
  2. In a large bowl, whisk together the flours, salt, baking powder and baking soda, set aside.
  3. In a small bowl, whisk together the brown sugar, eggs and buttermilk. Slowly whisk in the melted butter.
  4. Pour the wet ingredients into the dry and stir with a wooden spoon or spatula until just combined. Be careful to not over mix. Lumps are ok!
  5. Pour the batter, about ¼ cup for each pancake, onto the pre-heated skillet. Cook until bubbles start to form and bottoms brown, about 2 minutes and then flip over and cook other side, about another 2 minutes. Remove to a plate and enjoy with syrup!
To melt the butter, I microwaved it in a small (microwave safe) bowl on high for about 30 seconds.
