Roasted Asparagus
Serves: 2
  • 1 bunch asparagus
  • 1 Tbs. olive oil
  • pinch, salt and pepper
  1. Pre-heat your oven to 400 degrees.
  2. Cut off "woody" ends of the asparagus - I cut about 1 inch up. Then lay them on a large baking sheet. Make sure they are in one layer and not overlapping.
  3. Sprinkle them with the olive oil, salt and pepper. Mix them with your hands or spatula so they are all well coated.
  4. Place in the oven for 20 minutes. Remove and serve!
